Jungbunzlauer - A natural occurring fruit acid, produced commercially by microbial fermentation of a carbohydrate substrate. It is the most widely used organic acidulant and pH-control agent in foods, beverages, pharmaceuticals and technical applications.
Jungbunzlauer - The direct compressible type of citric acid. A thin layer of glucose on the surface improves both processing speed for tablets and enhances tablet hardness. It is also suitable for products where fat is undesired, e.g. in blends with water-soluble ingredients.

Jungbunzlauer - A neutral cyclic ester of gluconic acid, produced with the acid by fermentation of glucose. It is separated from the acid by crystallisation. This controlled acidification provides the formulator with a method of controlled chemical acidification, useful in dairy cultures, processed meats and other applications. Solutions are of very low order toxicity and are non-corrosive.

Jungbunzlauer - Supplied as anhydrous material. As an acid salt it occupies an intermediate position between citric acid and the neutral or weakbase trisodium citrate. It can act as a buffer in solutions, emulsions, beverages and foodstuffs. At the same time it complexes any present metal ions and keep them in solution. Hence, like citric acid or trisodium citrate it acts as an antioxidant by strengthening synergistically the effect of antioxidants.
Jungbunzlauer - A white granular powder which is freely soluble in water. Used in food, beverage, agricultural, industrial and plastic applications as a sequesterant, stabilize and dispersion agent.
Jungbunzlauer - A white free-flowing powder which is a potassium salt of gluconic acid, obtained from glucose fermentation. Recommended as a food enrichment agent, buffer salt in soft drink/beverage, source of potassium and sequesterant in industrial applications.
